Open For Recipes & Stuff:
* All these recipes make 2-3 servings (depending on your appetite & if you are eating them with extra greens etc...)
Lemon, Tahini, Dill Potato Salad:
- 3-4 cups steamed yellow baby potatoes (or any white potato of your choice)
- 200g steamed green beens
- juice of 3-4 lemons
- 1/2 cup of fresh dill
- 1/2 cup of diced spring onions (scallions)
- 1/2 cup good runny tahini
- salt & pepper to taste
- apply to face with lettuce boats :)
Classic Creamy Potato Salad:
- 3-4 cups steamed red flesh potatoes (or any other white potato)
- 1-2 cups fresh steamed peas
- 1 cup diced carrot
- 1/2 cup diced pickled gherkins (cornichon)
- 1/2 cup diced celery
- 3/4 cup fresh dill
- 1/2 cup finely diced red onion
- 1 cup coconut yogurt (try & find the one I showed, they now have ones with "live cultures" which makes it taste like greek yogurt!)
- 1-2 TBSP dijon mustard
- salt & pepper to taste :)
Peanut Butter, Maple & Lime (sweet & sour) Sweet Potato Salad:
- 3-4 cups roasted sweet potato chunks
- 1-2 cups steamed broccolini (or regular broccoli)
- 1 cup finely diced spring onions (scallions)
- 4 TBSP creamy peanut butter
- 2 TBSP maple syrup
- juice of 2-3 fresh limes
- garlic powder (or use 2 cloves of fresh garlic minced)
- water to thin as needed
- sprinkle of salted peanuts & dried cranberries
- salt & pepper to taste :)
