Ingredients
Buttermilk
Salt
Long Green chillies
Method :
1.For this, use the Long green chillies which have less spice. Wash the green chillies and make vertical slits half way along the
green chillies on two sides.
2.Don't remove the seeds, you can make with seeds, if they are too many seeds inside... You can remove a few seeds , don't break the green chillies in this process.
3.Now soak them in enough quantity of thick buttermilk , with salt added to it till they are well immersed.
4.Cover and shake them once a day and let them soak for 1 day.
5.Take out the green chillies from the butter milk on the 2nd day and sun dry them, by spreading over Cotton cloth / thick plastic sheet or plate.
6.In evening, take them and put them back in the same buttermilk mixture again, till you dry them next day.
7.Continue this process for at least 3 days. Then throw away the left over sour buttermilk and continue to sun dry the chillies till
completely dry.
8.Store them in an air tight container and deep fry them in hot oil till crisp and golden brown (like you fry papad and vadiyaalu) as and when required.These are very tasty with Rasam or Sambar or Pappu charu or curd Rice.
