Mouthwatering and tempting Chicken Dum(Process of cooking where the pot is tightly sealed and cooked on slow flame) Biryani at home recipe? Biryani is prepared using fragrant rice, aromatic spices, and chicken. There are many ways to cook this biryani,here we show the simple and delicious recipe at home:) Let's get started? INGREDIENTS: BASMATI RICE - 6 cups CHICKEN - 3 Lbs OIL - 2 Tbs(in marination) OIL-1/2 cup (while cooking chicken in a pan) ONION - 1 large GINGER GARLIC PASTE - 2 tbs SALT AS REQUIRED RED CHILI POWDER - 3 tbs(as required to your taste) TURMERIC POWDER - 1 tbs CORIANDER POWDER - 1 tbs CORIANDER AND MINT LEAVES (1/2 cup of each) GREEN CHILIES - 4 CLOVES - 2 BAY LEAF-2(in marination) + 2(in rice) CARDAMOM - 4(in marination) +2 (in rice) CINNAMON - 2 medium size(in marination) + 2(in rice) BLACK STONE FLOWER(Dagad Phool)-1/2 cup YOGURT - 1/2 cup CLARIFIED BUTTER (ghee)- 1 TABLESPOON FRIED ONIONS - 1 cup STAR ANISE -1 SAFFRON MILK/any color - 1/2 CUP(optional) METHOD: 1-Cut the chicken as required for biryani(if the pieces are too big). 2-Rinse them couple of time in running water. 3-Add curd + ginger garlic paste + chili + salt 4-In a mixer jar add green chili + 2 cloves + 4 cardamom + 2 bay leaf + fresh mint leaves + 2 small cinnamon + black stone flower(Dagad Phool ) + curd(do not add any water, it will ruin the flavor of your biryani) and make it a smooth paste. 5-Add this mixture to chicken and mix it well and add oil + fried onion(2 hand full) + any chicken biryani masala(store brought or any(optional)) + lemon juice. Let the chicken marinate for at least 2 hours. 6-Take 6 cups of basmati rice and rinse couple of time. 7-Add water to rice and set a side. 8-Prepare chicken now, chop onion finely. 9-Take a large pan + add oil + Cardamom + star anise + cinnamon + chopped onion, let them fry to golden brown color. 10-Add chicken now to pan, cover the lid and mix it occasionally(Make sure its not cooked completely)+ add coriander powder + salt(check the taste and adjust your spice level now). 11-Chicken has to cooked only 30-40%(do not let it cook completely, its get cooked in dum in later process) 12-Now prepare for rice:Place a bowl with around 18 cups water + salt + ghee + bay leaf + kala jeera + cardamom. 13-Let water boil now add rice(make sure no water is added) 14-Cook the rice to only 50 % (it should be little hard to break when taken to hand) 15-Now drain all the water and add this rice to partially cooked chicken (one layer now) and add fried onion + another layer of rice + color mixed milk /saffron (optional) 16- Garnish with fresh coriander leaves. 17-Seal the pan tightly with silver foil and lid and any weights on top(not to let any air escape) 18-Let it cook slowly for about 45 minutes, and your all set to enjoy this delicious aromatic biryani:) ~Spice and flavors you can adjust according to your taste to enjoy your best BIRYANI ever ?? ~ Enjoy this delicious Biryani with Raita or Mirchikasalan !
