CHICKEN CURRY WITH ROASTED COCONUT /SPICY SOUTH INDIAN CHICKEN CURRY
Ingredients
Chicken- 1 kg
Onions-2
Garlic-8 cloves
Green chillies-2
Ginger- 1 medium sized
Tomato- 1 small sized
Turmeric powder-1/2 tsp
Chilli powder-1tsp
Pepper powder-1 tsp
Kashmiri chili powder- 2 tsp
Salt - As per taste
Marinate the chicken pieces with turmeric powder and salt , keep it aside. Now we need to dry roast chilli powder, Kashmiri chilli powder and pepper powder for few minutes. Add masala in to the chicken pieces. Add all the vegetables ,mix it well and leave the marination for 15 minutes.
For grinding
Coconut- 1 cup
Coconut oil- 3 tbsp
Turmeric powder-1/2 tsp
Kashmiri chilli powder-1 tsp
Coriander powder- 2 tbsp
Cumin seeds- 1tsp
Small onions-6
Garlic- 3 cloves
Curry leaves -1 sprig
Water- 3/4 cup
Take a pan add enough oil , when it becomes hot all the ingredients for frying. When the coconut turns brown Add turmeric powder, Kashmiri chilli powder, coriander powder, roast it for a while. Let it cool down completely and grind it until we a fine coconut paste. Add enough water while grinding.
Cook the chicken in a kadai for 8-10 minutes. Pour the grounded coconut paste. Add water as per the consistency of the curry. Check salt and add if needed.when it starts boil we can add 1 tbsp of Garam masala. The freshly ground garam masala really enhance the flavor of the curry.Garnish with finely chopped coriander leaves. Best combination for ghee rice , chapathi, pathiri etc.

Fennel seeds-1 tbsp
Cardamom- 4
Cloves- 4
Dry roast all the ingredients and grind them to make a fine powder.
