Cauliflower Shrimp Fried Rice This recipe is so delicious and healthy! I promise you won’t miss the rice! It’s packed with flavor and very low-carb, KETO friendly and gluten-free! Cauliflower Ingredients: 1 medium head of fresh cauliflower 1 tablespoon salted butter 1 tablespoon coconut oil 3/4 teaspoon sesame oil 4 tablespoons coconut amino‘s or (2 tablespoons soy sauce) 2 eggs (Beaten) 1/2 cup chopped scallions 1/2 cup diced carrots 1/2 cup diced red peppers or frozen peas Salt and pepper to taste 2 tablespoons cilantro (chopped) 1 teaspoon chili lime seasoning or (1wedge fresh squeezed lime juice and ¼ teaspoon chili powder) Shrimp Ingredients: 1 pound shrimp ( peeled, cleaned, squeezed of excess moisture and cut into quarter inch pieces) 1 tablespoon olive oil 1 tablespoon salted butter 2 cloves garlic (minced) 1/4 teaspoon fresh chopped ginger-root (optional) Pinch of salt and pepper to taste Instructions: 1. Wash and cut up cauliflower into florettes. Blend in a food processor or high-powered blender to a rice consistency. Do not over blend avoiding puréed consistency and set aside! 2. In a medium sized skillet on medium high heat, sauté 1 tablespoon olive oil, 1 tablespoon butter and 2 cloves minced garlic for less than a minute (add fresh ginger if using as well) Add shrimp and cook for 1 minute or so until it is just done! Place in bowl and set aside! 3. In the same pan sauté 1 tablespoon butter and 1 tablespoon coconut oil until it melts, then add chopped carrots, peppers and scallions, sauté for 1 1/2 minutes then add cauliflower and sauté on medium heat for three or four minutes until steamed and cooked. 4. Add your cooked shrimp with all the juices it has made, mix to combine and then add the coconut amino‘s, sesame oil, cilantro and chili lime seasoning, mix well to combine as well. 5.And add the beaten eggs and mix continuously until it cooks into the mixture. (Med-High Heat) When finished transfer onto a serving platter and garnish with cilantro and chopped scallions! Serve immediately! Enjoy!
