Making one of my favourite pasta - Tortellini filled with butternut squash served with a butter and sage sauce. Please also check out my Instagram https://instagram.com/lewiszxchee Here is the recipe, which serves 8 tummies: Pasta dough: 300g strong white flour 100g semolina flour 3 whole eggs 3 egg yolks Butternut squash filling: 800g butternut 1 red onion chopped 1/4 cup olive oil 1/2 teaspoon dried chilli flakes 150g freshly grated Parmesan cheese 150g mascarpone 1/2 teaspoon fresh thyme freshly ground salt and pepper to taste
