Broccoli and Mushroom soup Indian style, Very healthy weight loss soup :
This healthy broccoli and mushroom soup is so delicious and nutritional rich, It helps reducing the fat from the body, therefore helps in reducing the weight. 1 cup of this soup every evening makes you really stronger. Broccoli consists of vitamin K, C, A, B1 etc.. Mushrooms are rich in copper, selenium and rich in antioxidants. This is very healthy soup for kids as well.
Ingredients:
Chopped Mushrooms: 1 cup
Chopped Broccoli: 1 cup
Chopped Onion: 1/2 cup
Chopped ginger: 1 small inch
Chopped garlic: 1 small inch
Chopped coriander: few leaves
Garam masala: 1/4th table spoon
Salt: To taste
Pepper powder: 1/4th table spoon
Finely chopped green chili: 1
Pine nuts: 1 table spoon
Cream: 1 tablespoon
Toppings: Any sort hard bread pieces/rusk
Oil: 1/2 table spoon
Direction:
1. In a vessel heat half a table spoon of oil toss chopped ginger, garlic and green chilies cook them for 30 minutes
2. Add Onions and 1/4th table spoon of salt and cook it for 2 to 3 minutes
3. Add Broccoli and 1 cup of water and boil it with a lid on for 3 minutes
4. Once the Broccoli is cooked, add half of the Mushrooms, garam masala, and the remaining 1/4th table spoon of salt and cook it for 2 minutes
5. Blend it to a fine paste, then transfer back to the vessel, add little amount of pepper powder(1/4th table spoon), adjust the consistency of the soup by adding water bring it to a boil.
6. Garnish with pine nuts, chopped coriander, toppings & serve with cream on top of the soup.
