Here's a delicious Italian recipe that you can make at home. Bocconcini and tomato pasta.
Recipe ingredients and instructions below.
Yield; 4 portions
400 grams pasta (creste di gallo)
2 cups heirloom tomatoes sliced
1/2 cup castelvetrano olives sliced
1/2 cup mini bocconcini quartered
1/4 cup sun-dried tomatoes
3 tablespoons olive oil
2 tablespoons cappers
1 teaspoon garlic paste
1/2 teaspoon chilli flakes
1 teaspoon salt
1/4 cup parmesan grated
fresh basil for garnish
Method
1. Bring a large pot of salted water to a boil. Add the pasta and cook till al dente about 8-10 minutes.
2. In a large mixing bowl combine the tomatoes, bocconcini, olives, cappers, sun dried tomatoes.
3. Toss the ingredients with olive oil and season with salt, garlic paste and chilli flakes. Let the mixture marinade for at least one hour or over night.
4. Toss the hot cooked pasta into the tomato mixture and stir to combine.
5. Garnish with fresh basil and grated parmesan
