For making macaron shells, I recommend using weights (grams, oz) rather than cups and tablespoons to get the best result.
For fifteen 1.5 inch macaron shells
65g Egg white
60g Sugar
83g Almond flour (Superfine)
73g Powdered sugar
Some biscoff cookies
*Make sure age the egg whites at room temperature
Coffee flavored Crème Anglaise
2 Egg yolks
20g Sugar
40mL milk
120g Unsalted butter (1 stick)
1 tsp Vanilla extract
10mL Hot water + 1.5 Tbsp instant espresso powder + 1 Tbsp Sugar
*Finishing Macarons with crushed biscoff (see video)
